Quinoa Pulao

A healthy twist to the traditional pulao, packed with protein from quinoa and vitamins from mixed vegetables.

Ingredients

  • 1 cup Quinoa (rinsed well)
  • 2 cups Water
  • 1 cup Mixed chopped vegetables (beans, carrots, peas)
  • 1 Onion (sliced)
  • 1 tsp Ginger-Garlic paste
  • Whole spices (Bay leaf, cinnamon, cardamom)
  • 1 tsp Ghee or Oil
  • Salt and spices to taste

Instructions

    Rinse quinoa thoroughly under cold water.

    Heat ghee in a pan/cooker. Add whole spices and let them splutter.

    Sauté onions until translucent, then add ginger-garlic paste.

    Add mixed vegetables and cook for 2-3 minutes.

    Add rinsed quinoa, salt, and water. Mix well.

    Cover and cook until water is absorbed and quinoa is fluffy (approx 15 mins).

    Fluff with a fork and garnish with coriander leaves before serving.
